Beaches.... :)~

Hit the beach late in the day with Angie, Katherine, and Elizabeth. We really enjoy our time hanging out down there with those chickies! Next weekend, weather & permit pending, we are going to cook out, and have a small fire at night ....That should be a fun time!

We were planning to go up to the Casino, and then Rhode Island this weekend, but we can wait a few weeks. We just want to get one more boogie boarding session in before it gets too cold. I have a shorty wet suit....but last year Kat braved it in her bathing suit.... It will be a nice empty beach after Labor Day weekend anyway... Plus the local surfers will be there. There was one dude there in his kayak last time. That was crazy!

I wish the waves were a little smaller. Then I wouldn't be so afraid to rent a board, and try to surf. It's one thing to boogie board em' ....but to get up on a surf board, and wipe out when you have two more big ones behind ready to pound on ya...No thanks!!!...I needs me some little waves to learn on!!!...

Been busy as hell at work since my last post. I've taken on more baking responsibilites, and have been running more specials off my station. They've really been selling! I get such a high off of people liking, and paying for my food!!!.....Not to mention the chef diggin' it too!....This place may be so frustrating at times.....but I have to say that it's one of the few work environments where the main players actually recongnize, encourage, and appreciate creativity... :)~

Here's one of the specials I ran this week....I still had to get rid of the avocadoes...LOL......

Avocado and Apple Salad

2 ripe avocados diced
1 red delicious apple cored, and thinly sliced
1 green apple cored, and thinly sliced
1 small red onion thinly sliced
1/4 c. dark raisins
1/4 c. dried cherries

Dressing
1/4 c. apple cider vinegar
3/4 c. apple juice
juice of one lime
2 tsp. honey
salt and pepper to taste

Whisk together and taste. Then adjust flavor if needed to your liking. Pour 1/2 the amount over ingredients, and GENTLY toss. Pour as much remaining dressing as desired. Chill for 2 hrs.

For my special I served it atop mesclun greens with marinated grilled chicken.
