This week my Chef picked up these hugemongous ...is that even a word..avocados grown in Hawaii, and are of the Ohata variety. They are softer, with a thin purple skin, and are much creamier in texture....I wish I had taken a picture of them....Cause in my 22 yrs. in the kitchen I have never seen an avocado that big or color.....Anyway....They needed to get used, so I made a Chilled Creamy Guacamole Gazpacho.
If you are a fan of guacamole you must try this recipe! It's totally a vegan dish. There's absolutely no cream at all. Pureeing the ingredients with the veggie stock gives it it's silky smooth texture... Enjoy! :)~ ..........

Creamy Guacamole Gazpacho
3 peeled and seeded ripe avocados
2 c vegetable stock
2 TB or to taste freshly squeezed lime juice...I like more
1 TB chopped cilantro
1/2 bunch scallions
1 TB tabasco or hot sauce
1 tsp cumin
salt and pepper to taste
Puree all ingredients in food processor or blender. Taste and adjust flavor and chill for 2 hrs. Adjust flavor again and serve.
Garnish: Top each soup with a little bit of each of these items.
1 cucumber peeled, seeded, and diced small
1 tomato diced small
1 red onion finley diced
chopped cilantro
Dallop of sourcream if desired

My Chef picked them up at The Restaurant Depot in Orange, but you have to be a member. I've never seen them in the local stores, but now that I have I will ask the produce dude at Stop& Shop if they carry them. They are a seasonal item, and will be around till end of summer... :)~
