Roasted Red Pepper Soup w/ Spinach Basil Pesto :)~

Roasted Red Pepper Soup w/Spinach Basil Pesto

6 Roasted Peppers
3 potatoes diced
3 c veggie stock
1 c celery diced
1 onion diced
Sautee the potato onion, and celery for a few minutes.
Add the stock and cook veggies until tender.
In a food processor or blender add All ingredients and puree.
Add aditional stock to desired thickness. Chill

Spinach Basil Pesto
1 bunch basil
2 hadnfulls fresh spinach
handful pinenuts
handful parmesan cheese
1 garlic clove
3/4 c extra virgin olive oil....xvoo

Add all ingredients except xvoo to food processor. Pulse a few times to break up greens. Then with the processor on slowly add xvoo till smooth. More oil may be needed.
transfer to squeeze bottle and chill.

I pour the soup in each bowl, and garnish with the pesto sauce. I created this spider web effect by starting in the mddle of the soup with the pesto, and circling around. Then drag a knife through it to make web. You can also zig zag the pesto, and drag knife for a different design.
