Con Mi Famiglia.... :)~

Friday night Kat and I had dinner with John & Roo... My Bro and Sista in-law. It was the first time we have been to their humble little abode. . .And when I say little.... I mean like 1/2 the size of my apartment. They really maximized their space though. It's a really cute first place together. And hey, if the marriage can survive these tight quarters.... it should be able to survive anything!!!!...LOL...They had some great storage ideas from IKEA that I am definitly going to buy....

Roo fessed up during dinner that she was nervous about cooking for me. ... " The Chef "....I told her that everyone who invites us over to eat says the same thing about being intimidated.....
People!... I am not a "food snob" at all....Foodie...shmooodie.....I grew up on comfort foods that my mom made.....and that's what I make at home for meals for the most part....I really wish people wouldn't be so afraid to cook for me.....Seriously! OK end Rant...or rather Plea......

So anyway, we had a nice cozy candle lit dinner. Roo made some tasty, just the right heat chili, and homemade cornbread. Props to her!!!...cause I always use boxed Jiffy cornbread.... Everything was great just as Iknew it would be!!!...

After dinner we hung out in the living room to watch a video they had made on their mission to Mississippi during Thanksgiving. They went with some people from the church to help out after Hurricane Katrina....They helped tear things down, build things up, clean up, and fed thousands of people....I really wish I could've been there with them to share in that experience!
Then John and I played the guitars together, probably longer than we should have...LOL...and shot the sh!t in between songs....Before we knew it...it was after midnight....so we said our good-byes....I always enjoy, and look forward to, the time spent with my Broha and lovely wife Roo....THanx for an awesome evening....

Oh yeah.....for Mother's Day Kat and I picked up a bucket of KFC and hung out with my Mom. I know..... KFC...But it was what my mom wanted.....
My sister the sponge, who lives on the other side of my mom's duplex, usually has a picnic.....She invites all her drunken idiot friends....and calls it a " Mother's Day " picnic......But it was raining...so she went to her boyfriends mom's instead.....Whoo Hoo!!!...Which was just fine with me, and my mom!

Oven Baked Fried Chicken

1 Organic Free Range Chicken, cut up into pieces
Kosher salt
3 c. Unbleached flour
2 TB Garlic powder
2 TB Onion powder
2 TB Paprika
2 TB Chili powder
2 TB Celery salt
1/2 tsp Cayenne
Freshly ground black pepper
1 quart buttermilk
2 TB Hot sauce

Put the chicken pieces into a large bowl. Cover the chicken with water by 1 inch; add 1 tablespoon of salt for each quart of water used. Cover and refrigerate at least 2 hours or overnight.
In a large bowl, or ziplock baggie, mix the flour, garlic powder, onion powder, paprika, chili powder, celery salt, and cayenne until well blended; season generously with salt and pepper. In separate bowl combine the buttermilk and hot sauce with a fork and season with salt and pepper.
Coat the chicken in the flour mixture first. Then dip them in the buttermilk. Let the excess drip off, but make sure the chicken is completly coated. Then back in the flour mixture again.

Arrange chicken on a sheet pan coated with cooking spray. Pre heat oven to 400. Bake for 35 to 45 minutes or until cooked through.

Hey KTGRL.....Actually we came over right after your surgery, and I think you were nice and relaxed by the pain killers!!!...Ha! HA!...I hope you are feeling better!..Miss ya too!.. :)~

Funny story about your friends being nervous. The only time I've REALLY been nervous cooking for someone was a friend/boss that couldn't stand garlic. It was like cooking for a vampire.

Chicken sounds good. Honestly, "organic chef" scared me off the first time I saw your blog on Blog Explosion. I just have that "if it's good for me it can't taste good, throw some sour cream and guacamole on it" mindset :)
