Saturday afternoon was the annual "May Party". My friends Tom, Walt, and Matt all have birthdays in May.....Hence.... the May Party.....We all grew up in the same neighborhood, and have remained close friends. We haven't had the party for a few years, but this year Matt offered to host. He and Nancy (his fiance) recently moved to a new place, and decided to throw the shindig. It was great! The weather held out..it only sprinkled for a few minutes and the sun was in and out all day....Steve fired up the grill with chicken, dogs , and burgers....Tom brought his fire pit...that was nice! What would one of our get togethers be without a fire pit!!!....It was just really nice partying with old friends that I haven't really gotten to hang with since last summer.
Sunday Kat and I went to the Greek Festival up the street form us. We look forward to going every year, if nothing else to get some Mmmmm Mmmmm homemade Greek pastries. THis picture here is of Kataifi...... Kat's favorite! It looks like a bitch to make.
Later that afternoon we stopped at Ella and Catherine's to see the puppy.... Lil Miss Molly. I can't believe how much she has grown in only two weeks. We brought a fleece chew toy, and a nylabone for her. She loved the fleece one...but as we were playing with her, and she was chewing on my fleece hoodie.....I realized....Hmmmm maybe that wasn't the best choice of toys till she knows better than to chew on clothes and furniture.....LOLOLOL.... oh well....it was the thought.....or in this case....lack there of ...that counts.....Ha! Ha!.... :)~
Here are a potato and a pasta salad recipe that I like to make for cookouts....
5 lbs. Red Potatoes quartered, boiled and drained
3 Ribs celery small dice
1/2 bunch scallions chopped
2 Carrots shredded and rinsed and drained in collander (so they won't bleed into salad)
1 C Frozen peas thawed
2-3 Hard boiled eggs chopped
The Dressing
3/4 C Helman's Mayonnaise
1/4 c Sour cream
2 tsp Red vinegar
1 TB Mustard
1/2 tsp. Caraway seeds
2 tsp. Salt
1/4 tsp. Black pepper
In a large bowl combine the first 6 ingredients. In a separate bowl mix the dressing ingredients. Pour over potatoes and toss gently. Refridgerate till ready to serve. If you can make this a day ahead. It tastes much better when the flavors have had time to marry together!
Lemon Tuna Pasta Salad
1 C Tuna rinsed, and drained
3 Ribs celery small dice
1/2 Yellow bell pepper small dice
1/2 Red pepper small dice
1 Red onion small dice
THe Dressing
3/4 C Helman's mayo
2 tsp. Mustard
1/8 tsp. Cayeanne pepper
Fresh lemon juice to taste
S&P to taste
Place the first 7 ingredients in a large bowl. In a separate bowl wisk the dressing ingredients together and pour over the pasta and toss gently. Refridgerate till ready to serve. Better when served the next day.
