Roasted Spring Vegetables... :)~

Roasted Spring Vegetables

1 Bunch fresh asparagus, ends trimmed
2 lbs. Parboiled baby new potatoes
2 Bunches Scallions, chopped
1 Red pepper, cut into 1-2 in. squares
1 Yellow pepper, cut into 1-2 in. squares
3 Shallots, peeled and cut into fourths
4 Roma tomatoes, cut into half, lengthwise
Handful of favorite fresh mushrooms, rough chop if needed
¼ c XVOO
1 TB. salt
4 lg Cloves garlic, smashed
1 tsp. ground black pepper

Place all ingredients in a large bowl and toss. Spread out in a roasting pan or on a baking sheet. Place in 400o oven for 20-25 minutes, stirring vegetables occasionally. Cook till tender and have a nice brown carmelization to them.
