Eat your Peas... :)~

I had my computer whiz of a wife put in a drop down box of all my previous recipes for your quick reference. Check it out in the side bar underneath my profile!...I hope you'll find it useful.... :)~

All peas are a good source of vitamin A, vitamin C, thiamin, folate, iron and phosphorus. Green peas are second only to lima beans as a fresh vegetable source of protein. Frozen peas compared to the nasty canned variety, retain their color, flavor and nutrients. Paired along with the Quinoa this is a high protein dish!

Quinoa Pilaf
1 c Dry quinoa follow directions on box
2 Carrots peeled and small dice
2 Ribs celery small dice
1 lg Onion small dice
3/4c Frozen peas
1 TB Butter (optional)
S&P To taste

Cook quinoa according to directions, and set aside. Saute onions, celery, and carrots until tender. Add frozen peas, butter and quinoa and mix well over heat for 1-2 minutes. Serve hot or cold. For a different twist try adding some curry powder to this recipe.
