The Devil made me do it... :)~








I love deviled eggs....Someone always brings them to a party or gathering. You can add so many things to change up the flavor and texture. I think everyone has their own twist on this basic recipe, because I've never had the same one twice... Here are some of the favorites that I've tried over the years. I also use Helman's mayonaise in all my recipes that call for mayo. It really makes a difference... :)~

The Perfect Hard Boiled Eggs
Place a desired amount of eggs in a saucepan. Cover the eggs with enough cold water, so that the water level is approximately one inch above the eggs. Bring the to a rapid boil. Remove the saucepan from the heat and cover. Allow the water and eggs to stand for 18 - 20 minutes.Immediately pour the hot water from the saucepan, and run cool water over the eggs until the are cool enough to handle. Drain.
To Peel Your Hard Boiled Eggs
With a hard boiled egg that has been cooled, tap each end of the egg lightly on kitchen counter to crackle the shell. Roll the egg between your hands or on your kitchen counter to loosen the shell, then peel under gently running cold water. Use your peeled hard cooked eggs in any of the recipes below.

Basic Deviled Eggs
6 hard boiled eggs, peeled
3 TB Helman's mayonnaise
1/2 tsp dijon mustard
1/8 tsp salt
1/4 tsp pepper
paprika for garnish

Cut eggs lengthwise in half. Slip out yolks, and set aside the whites to fill later. In the mixer or food processor add the yolks and all the other ingredients, and blend till smooth. Taste and adjust seasonings. Fill whites with egg yolk mixture with a spoon, heaping it lightly. If you have a pastry bag with decotaive tips that adds a nice touch. Cover and refrigerate. Sprinkle paprika for garnish on top when ready to serve.

Crunchy Veggie Deviled Eggs

6 hard boiled eggs
3 TB Helman's mayo
1 TB red pepper finley chopped
1 TB carrot finely chopped
1 TB scallions finely chopped
1 tsp mustard
1/4 tsp salt
1/8 tsp pepper
Cut eggs lengthwise. Slip out the whites and set aside. In the processor add everything except the veggies, and blend till smooth. Then stir in the red pepper, scallion , and carrot. Taste and adjust the seasonings. Fill whites with mixture using a spoon or pastry bag.

Spicy Deviled Eggs

12 hard boiled eggs
2/3 cup Helman's mayo
1/3 cup finely shredded smoked Guda cheese
1 tsp lemon juice
1/4 tsp salt
1/4 tsp ground cumin
1/8 tsp chilli powder
1/8 tsp cayenne

Cut eggs lengthwise and slip out the yolks. Set whites aside.. Add all ingredients to processor and mix till smooth. Either with a spoon, or using a pastry bag, pipe yolk mixture back into whites. Cover and chill. Before serving, garnish eggs with two strips of pimiento criss-crossed atop.

Cousin Claire really gave it to you two the other day! It was Very entertaining, to say the least!!!...That was a big family gathering... So Hopefully you won't have to go through that too much more... It was All in Love....

Deviled eggs are one of the few things that can actually get me to come to a family function...that and free food/booze.
