You know what would be really good right now?... :)~

FLAN... :)~ That's what my girl would say! She loves this dessert so much, that when I would say, " You know what would be good right now.......) That would be her reply!....Silly I know....But it's kind of a running joke for years now!

I have had to make this for so many restaurants. It is certainly a classic!.....
I like to add my own twist of course!......By adding different flavors, fruits, nuts, ect to the basic recipe.......
Just be careful with the Very Hot sugar....and don't let it burn!.......I can't tell you how many times I've been so busy at work that I have let the sugar go too far, and burnt it beyond using...Once it gets too dark. It gets bitter! It takes a while to get to the caramel color. But once it starts changing, Don't leave it! ...... It will go quickly from here.

Flan....Creme Caramel....

3 slightly beaten egg yolks
2 slightly beaten eggs
1/3 c. sugar
1 2/3 c. milk
1/2 tsp. vanilla

1/3 c. sugar
2 TB water
Strawberries, sliced thin.....Or raspberries, blueberries, blackberries...or any combo...

In bowl combine first 3 ingredients; stir in milk and vanilla. Set aside.
In heavy skillet add 2 TB water and 1/3 cup sugar over med. about 5-7 minutes. When golden brown, remove from heat. Pour syrup into 3 oven proof ramekins, or disposible tins; quickly swirl to coat bottom and sides. Let cool for a few minutes. Add a little of the fruit. Pour egg mixture into mold. Set in shallow pan on oven rack; pour hot water around mold 1 inch deep. Bake at 325 degrees until knife inserted off center comes out clean, 50-55 minutes. Chill 2-3 hours.
Unmold dessert onto serving platterby taking a knife and running it along the edge. Then turn upside down. If using the diposable tins, poke a hole in the bottom before turning over. Garnish with whipped cream and fruit. Makes 6 servings.
