Rainy Day Comfort Favs... :)~

I would've titled it Cold and Rainy Day Comfort Favs......But it has not been your typical winter here on the coast of CT. ........Hmmmmm.....Global Warming??....It's raining yet again...Almost all precipitation has been in the form of rain. It snowed enough twice to make a snowman, and go sledding.....wich is just fine for me....I'm a warm weather girl!!!

So this week I will be posting some of my favorite comfort food recipes that my mom used to make, and passsed on to me.... :)~


MY Mom's Beef Stew

1 1/2 lbs. Stew beef or London broil cubed
1/2 Cup flour seasoned with S & P
2 Onions med. dice
2-3 Cans of beef stock.... or bullion cubes mixed with water
5 Carrots med. chop
4 Potatoes med. dice
3 Ribs celery med. chop
2 TB XVOO


Marinade for beef
2 TB XVOO
1 Lg Garlic clove minced
1/2 tsp Salt
1/8 tsp Pepper

I start by marinating the beef and letting it sit for at least an hour. In separate bowl mix the flour and S & P . Add the beef and coat it with the flour....

You will need a deep pot for this. Get it hot and then add the olive oil. Carefully add the meat and brown on all sides. When meat is 3/4 browned add the onions and continue cooking 10- 15 min on med heat. When onions are soft add the stock and simmer with lid for 45 min.

Add carrots, celery, and potato to stew and bring to a boil. Then turn down to simmer for 20 min. or till veggies are to desired tenderness.

I personally love this with Bisquick dumplings. Mmmmmmmmm.....
I start them after I put the veggies in and the stew is at a boil....
Just mix 2 cups Bisquick with 2/3 c milk. Stir till dough forms. Drop by spoonfulls into stew. Turn heat down to low.....Cook 10 min. uncovered. Then 10 min. with lid on...Mmmmmmmm
