Don't let yer meat loaf.... :)~

I think just about anything my mom made I consider a comfort food...Meatlaof is definetly at the top of my list!!! I personally like to eat this with mashed sweet potatoes, and Yes, dare I say it.... canned creammed corn, and a packaged brown gravy. :)~



My Mom's Meatloaf

2 lbs. Ground beef or turkey
1/2 pkg. Onion soup mix
3 slices of bread cubed
1/4 to 1/2cup Milk
l Large Egg
5 Mushrooms minced in the food processor
2TB Worcheshire sauce
4 Strips of Bacon
2/3cup Ketchup, reserve half
Salt and Pepper to taste

Pre-heat oven to 400.
Put the cubed bread in a bowl, and pour in the milk until it just covers the bread. Let it soak in for 5 min. Squeeze out the excess milk. Put the bread back in the bowl and add all the other ingredients EXCEPT the ground beef and mix. This is so that the beef doesn't get over mixed and become tough.... Add the meat and mix well. Form into a big meatball then put it in a greased loaf pan and shape. Place the bacon on top length wise and then slather the remaining ketchup on the top of the loaf and bake 45 -60 min.

Mmmmm. Meatcake! Ditto on the mashed potatos, preferably Yukon Gold, heavy cream and lots o' buttah.

A classic! I have snipped it for Saturday. I like the beef gravy or turkey gravy in the can or in the jar, too. Especially good since I am cooking for one, not counting the yellow lab who begs with her eyes!
