Chilled Fruit Gazpacho... :)~

Ok............So here is the recipe for the Chilled Fruit Gazpacho......It kind of takes good knife skills to dice the ingredients as small as they should be for the presentation of it all... :)~ ....but try making it even if you don't have "The Skills" ...just cut the fruits a little larger...and call it "Chunky Fruit Gazpacho".....LOL!!!!...

I hope you enjoy this refreshing summer treat. Try it as a soup, or even desert!

Chilled Fruit Gazpacho

1 Honeydew
1 Cantelupe
3 Peaches
3 Plums
1 Mango
1 Seedless Orange
20 Red Grapes cut in half
1 Cucumber peeled and seeded
1 Small Red Onion
2 Vine Ripe Tomatoes
2 C Orange Juice
1 C Ruby Red Grapefruit juice
1/8 c Chopped Fresh Basil
1/8 c chopped Fresh Mint

Small dice all the fruits and veggies. Add the rest of the ingredients. Mix well and chill. Garnish with fresh whipped cream and a mint sprig.... ENJOY!.....
