Stuffed Pepper Recipe... :)~



This is my Mom and sister Lisa's recipe for Stuffed Peppers...It may be simple.....simply friggin' delicious that is! :)~
5 Organic Bell peppers any color
1lb. Organic Ground beef
1 Onion diced
1 Clove garlic minced
160z Tomato Sauce
1 boil in bag cooked brown rice
1 Tb Worcheschire sauce
2 Beef boulion cubes
2c hot water
Cut tops off of peppers and set aside. Saute onions till brown, add garlic, and cook 5 min more. Add the ground beef, and cook till done. Drain off any fat. Add 1 cup tomato sauce, worcheshire sauce, and the cooked rice. Stir together well. Take off heat. Stuff the peppers with mixture and put tops back on. Mix together water and boullion cubes until the cubes disolve. Add to reserved tomato sauce. Place the peppers in oven proof dish and pour the tomato mixture around peppers 3/4 of the way up dish. Cover and cook for apx 1hr at 350, and 15min. more at 425 degrees. Peppers should brown up and blister a bit......Enjoy! :)~

I am SO glad that you posted this recipe. It sounds like one that I will try soon. Very healthy sounding.. 1 question though, do you think lower sodium beef boullion cubes would be ok?

Thanx Ktgrl and Jess.

Jess, sure you can use the lower sodium bullion. You can stuff them with so many other things too. You can make them vegetarian and sautee up some veggies, and beans to mix in with the rice. You can switch that up too. Try using wild rice, orzo pasta, or even couscous. YUMMY!

Ohhh, I swear the next time I make my gravy and meat you guys are sooooo invited over for dinner. Maybe next week or the one after that fo sho'!

Alright, now that last line is just wrong cause you know my butt would be there! lol That does sound like a great recipe and I am heading to the Organic store tonight to pick up some vitamins and I will price the peppers. lol I am not one to pay a small fortune for things that I can get at a Farmer's market dirt cheap. I heard that if you wash your vegetables and fresh fruits in 4 oz white vinegar to a half sink full of water for 30 minutes, it removes pesticides and fertilizers. Do you know if that is true?

Not sure about the vinegar...
I wash all my produce organic or not. You HAVE to wash organic produce also to remove the insect feses!!!

The colored peppers are expensive...
I'm not one to spend a fortune either. I'm about as frugal as they come! I found all those peppers in the in the discounted area, and said Hmmm what can I make with these!
I always check out what they have there first! I may have to hunt around a bit, but I almost always find something great to use for alot less!
