ROOTS :)~

All I do to make this dish is toss the veggies with xvoo and S&P. I keep the beets separate so they don't bleed all over the rest. I also add Parsnips...(Not shown)....

Roast them in a 400 degree oven for about 20- 30 min. Give them a stir a few times during cooking so they brown evenly. Serve as a main or side dish. I enjoy this hot or cold. I also like them in a wrap with roasted peppers..... :)~
