Put me in Coach... :)~


So my team had our first softball game this week......We lost......20 gazillion to 8 I think the score was.....LOL....Not bad for not having any real practices, 6 new players, and only 11 of us able to show up......THe first few innings they were killing us.....But around the 3 inning or so we were warmed up, and had a little rally....But the other team run ruled us the next inning and the game was over......Win some loose some....We really don't care....Just as long as we have a good time doing it!!!... :)~

My friend Lisa, her two sisters, Jennifer and Christine, and I try to get together once a month or so to catch up with each other. Last night it was my turn to host. I thought I'd switch things up a bit, so we played a bunch of card games.....Simpson's Edition UNO, 7 card no peek, Texas Hold Em, blah, blah, blah....Jennnifer was the winner of the never unending UNO game....I hope Christine now knows that you HAVE to say UNO when you are out of cards...Ha! Ha!......Kat was kicking our arses in Texas Hold Em.....but Lisa went home with the Silver "Big Y" Coin at the end. It was a great night of eating, catching a buzz, Shootin' the Sh!t, and laughing, laughing, laughing. THanx ladies!.....

For dinner we had tacos, and I made some Spanish rice to go with it. THen for dessert we had pound cake covered in strawberries, blueberries, bananas, cantelupe, and topped with good ol' Cool Whip.....I hope you girlz took some zantac or pepto......I know I did at 3 am.....LOL....

Spanish Rice


2 c Uncooked brown rice (prepare according to box directions)
1 Onion diced
1/2 c Red pepper diced
1/2 c Zucchini diced
1 c Cooked red beans
1/4 c Scallions chopped
2-3 TB Jarred Sofritto sauce......to taste
1 TB Bacon grease (optional for sauteing the veggies)
Cook rice and set aside. Sautee the onion first for a few minutes, then add the zucchini and red pepper and cook till veggies are tender. THen add the Soffritto sauce, beans, scallions, and rice and keep it on the heat for a few minutes more stirring the flavors together. Makes aprox. 6 servings

HEy T, you know we always have a good time when we play, and at the bar afterwards....

Yeah you guys should come to some games!... We play on C1 at 7 this THurs. THat's the one near the bathrooms....LOL... :)~

Love the spanish rice recipe, and it includes two of my favorite things - sofrito and bacon grease!

MMMMMMM.....bacon grease...I love cooking certain things with it...Especially fried chicken...
