Hot Spinach and Artichoke Dip
1 cup mayonnaise
1/2 cup sour cream
1/2 cup grated parmesan cheese
1 tablespoon lemon juice
1 cup artichoke hearts, chopped
2 teaspoons fresh garlic, minced
1 tablespoon chopped pimiento for garnish
1 teaspoon salt
1/2 teaspoon pepper
In a small bowl, combine the mayonnaise, sour cream, parmesan cheese and lemon juice. Stir in the artichoke hearts, garlic, pimiento, salt and pepper. Transfer to a heat-proof dish. Top with 2 tablespoons parmesan cheese, and bake in a 350° oven until hot, about 15 to 20 minutes. Serve with a nice crusty bread or crackers. Makes 3 cups.
Baba Ghanouj
1/4 c lemon juice
1/4 c tahini (sesame paste)
1 lg clove garlic
2 tsp salt
1 TB xvoo
1 TB finely chopped parsley for garnish
Roast eggplant in a 400 degree oven for 1/2 hr. or till fork tender. Let cool. Add all ingredients to the food processor, and puree till smooth. Chill for 1 hour. Garnish with parsley, and serve with baked pita chips.
For the baked pita chips I just cut them into triangles and toss in a bowl with xvoo, S & P, and whatever herb I'm in the mood for that day. Bake in a 400 degree oven for apx. 10 min each side or till desired crispiness.......
