Good 4 U Snacks

I hate when I want a snack, and all I have is CRAP in the house. Pre-packaged Chips, cookies, ring dings/twinkies, ice cream.....need I go on???.....Can you tell I have a sweet tooth?.....I think the only way to stop eating this crap is to NOT buy it anymore, or at least not as much anyway....So I started stocking up on some healthy alternatives....Some require a litte prepartion...and some are just in their natrual raw state.....

Well the obvious ones are fresh fruit and vegetables....fruit usually needs no preparation, and travels well. Veggies need little to no work at all. Either take the time....Appx. 15 min prep time for the whole week to peel and cut them so when you want it they are readily available. Or you can find them in the store already cut up.....

Baked chips & salsa....see recipe at end of this entry
Light popcorn without all that butter on it...
Unsalted nuts...Nuts are high in fat, but it's a kind that's as good for the heart and arteries as olive oil....
Quesedillas....Tortillas with melted cheese, and add just about anything else to these...tomato, scallions, corn, beans, chicken, mushrooms, spinach ect......
Granola bars....
Sunflower seeds...
Cheese, cottage cheese....
Lowfat yougurt......
Fruit smoothies....just add favorite fruit to yougurt and 2%milk and put in blender. Cheaper than any prepackaged drink. And way better for you!
Pita and bagel chips......Instead of buying these already made in the store I make them myself without any additives and preservitives......Just toss with olive oil, S&P, maybe some garlic or fav. herb and bake till crispy...

Salsa Recipe
1 can diced tomatoes
1 red onion large dice
1 red pepper diced or 1 roasted red
1 small jalepeno seeded and minced
1tsp honey
juice of 1 lime

When cleaning and cutting jalepenos, or any other hot pepper, I ALWAYS use surgical gloves. And discard them when done. This prevents agaisnt transfering the heat of the pepper to parts of your exposed skin.....FYI....Most of the heat is in the seeds and ribbing. It can be very painful especially in your eyes... Not to mention the unmentionable places this can happen!....Ha! Ha!.... :)~

Sautee onion, red pepper and jalepeno till tender. When cooled put in food processor. Add the tomato, juice of 1 lime, and honey and pulse a few times till desired chunkiness....Is that even a word???.....Chill for an hour....If you use jarred roasted peppers no need to cook them..

Chef, thanks for your note at Hasty Ruminations. Very sad car crash. We used to live in Stratford, years ago. Our kids went to St. James grammar school. I'll be visiting your blog frequently - I like your recipes!

I'm a big fan of edamame (soybeans)!

I haven't ever tried edamame. How do you prepare them?
