Zucchini Fritters













2 Lg Zucchini Shredded and salted
3 TB Organic Flour
3 Organic Scallions, chopped
1 tsp Organic Fresh Dill, chopped
3/4c Extra Sharp Cheddar Cheese
1 Egg beaten
1/2c Seasoned Bread Crumbs
Salt and Fresh Ground Pepper to taste
1 c Reserved Seasoned Bread Crumbs to dredge fritters
Shred zucchini and sprinkle with1 tsp of salt.....This helps get the liquid out. Let sit for 15 min in a sieve with a bowl under it to catch the juice. With your hands squeeze out excess water from zucchini. Add all other ingredients, mix and refridgerate for 1hr....Pour off any liquid that may be on top....Form into patties, and dredge in the reserved bread crumbs. Get pan hot and add the oil.... Carefully add the fritters to the pan and turn down heat to med. Cook till crispy golden on each side. Enjoy hot or cold. Plain or with a favorite dipping sauce.
