Happy Jesus Died for Our Sins Day... :)~

When I was a kid my parents owned a beauty salon. So that meant Thurs. Fri. Sat. my sister and I had various Aunts as babysitters... Being raised in an Italian Roman Catholic family, they Always made Fried Fish on Fridays.....

Through the years I have had Fish & Chips out at restaurants, and of course I've made it myself..... But nothing compares to the memory of how my aunts' tasted!!! Here's my take on........

Beer Battered Fish
3 eggs
1 1/2 c. flour
2 tsp. baking powder
2 tsp. salt
1/4 tsp. pepper
2 tsp. melted butter
Flat beer....I like a nice dark Sam Adams
lemon wedges
Filets of favorite white fish

Mix eggs and butter and dry ingredients together. Add beer until it makes a semi-thin batter. Dip fish in batter and fry at 375 until golden brown. Squeeze lemon over fish and serve.
