Strawberries...Sweets, Drinks, and Tarts... :)~

Strawberries are now in season! Not only do they taste great, but they do the body good too! They are naturally high in fiber, vitamin C, folate, potassium, and antioxidants.

When I was a kid there used to be woods behind the house that I grew up in. We used to have all kinds of adventures back there!...And there were all kinds of berries growing wild. We would make things like pancakes and jam out of them.

I think I love them most when dipped in chocolate. The seeds don't bother me that way. I know weird...again a texture thing... :)~

Strawberry Muffins
2 eggs
2/3 c sugar
1/2 c milk
1/4 c plain yogurt
1 tsp vanilla 1/2 stick butter, melted and cooled
2 c flour
1TB baking powder
1/4 tsp salt
1/4 tsp cinnamon
1 1/2 c strawberries, hulled and cut in chunks

Preheat oven to 375 degrees F. Grease mufin tins or line with paper cups.
In a large mixing bowl, whisk together eggs and sugar until light. Add milk, yogurt, vanilla, and melted butter. Gently whisk.
In another bowl, combine flour, baking powder, salt, and cinnamon. Add to milk mixture and stir just until flour disappears. Gently stir in berries.
Spoon thick batter into muffin cups to the top. Bake about 25 minutes, until tster comes out clean. Invert and cool on rack.
Serves 12

Strawberry Rhubarb Cobbler
1-1/4 c Rhubarb, cut into 1 inch pieces
1 c Strawberries, sliced
2 tsps. Lemon juice
1/3 c plus 1 Tb. Sugar
1 TB Unsalted butter, cut into small pieces
1 c Buttermilk biscuit mix
1/2 c Skim milk, or half and half

Preheat oven to 450°F. Combine rhubarb, strawberries, lemon juice and 1 cup sugar in an 8 inch baking dish. Dot with butter. Place dish in oven for 5 minutes to heat while preparing topping. Combine biscuit mix and milk in a bowl and mix until a soft dough forms. Spoon heaping tablepoonfuls of dough onto fruit, spacing them about 1/2 inch apart. Sprinkle with remaining sugar and bake about 20 minutes or until topping is golden.




Virgin Strawberry Daiquiri
1 oz fresh lime juice
3 oz fresh strawberries
1 teaspoon sugar
Cracked ice

Put the lime juice, strawberries, and sugar into a blender. Blend until smooth, then add the cracked ice and blend again until smooth. Pour into a chilled cocktail glass. Garnish with whole strawberry or mint leaves. Serve with a straw.


Strawberry Martini Recipe with Cassis
2 oz vodka
1 teaspoon lime juice
1 teaspoon blackcurrant liqueur
1 teaspoon sugar
5 fresh fresh strawberries

Crush strawberries in cocktail shaker, then shake the other ingredients with cubed ice and strain. Garnish with a whole strawberry.
Serve in Martini glasses.
